- 4 thick slices brioche bread
- 3 large eggs
- ½ cup whole milk
- 2 tbsp sugar
- 1 tsp vanilla extract
- ½ tsp cinnamon
- Pinch of salt
- Butter for cooking
- 2 bananas, sliced
- 2 tbsp brown sugar
- Maple syrup for serving
- Powdered sugar for dusting
Instructions
- Make custard: In a shallow bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until well combined.
- Soak bread: Dip each slice of brioche in the custard mixture, letting it soak for 20-30 seconds on each side. Don't oversoak or it'll fall apart.
- Cook French toast: Heat butter in a large skillet over medium heat. Cook soaked bread for 3-4 minutes per side until golden brown and slightly crispy.
- Caramelize bananas: In the same pan, add a bit more butter and brown sugar. Add sliced bananas and cook for 2 minutes until caramelized.
- Serve: Stack French toast on plates, top with caramelized bananas, dust with powdered sugar, and drizzle with maple syrup.

- Day-old brioche works best - it soaks up custard without falling apart
- Try challah or thick white bread if brioche isn't available
- Add a splash of orange zest to the custard for extra flavor
